Ingredients

Sushi rice2 cup / 杯 [washed, soaked and drained]
Tuna Fish Meat 3 pcs [20 cm long strips]
Eel3 pcs [20 cm long strips, grilled]
Pickled Radish 2 pcs [20 cm long strips]
Cucumber2 pcs [20 cm long strips]
Toasted Laver for Sushi 5 sheets [20 cm x 20 cm]
XO Sauce
XO Sauce
10 heaped tbsp


Marinade
White Vinegar 4 tbsp / 湯匙
Sugar 4 tbsp / 湯匙
Salt 1/2 tsp / 茶匙


Directions
  1. Add water and cook sushi rice.  Heat through seasoning mix and stir into hot cooked sushi rice.
  2. Divide cooked rice into 5 portions.  Put a sheet of laver on bamboo mat.  Spread 1 portion of cooked rice on laver, leaving about 1 cm at both ends.  Put any 2 kinds of filling and 2 heaped tbsp of Lee Kum Kee XO Sauce [arrange as 1 long strip] on the center of cooked rice.
  3. With the help of bamboo mat, roll forward to form sushi roll.  Gently but firmly press to keep the shape of the sushi roll.  Repeat to make 5 sushi rolls.  Slice into equal length and serve.

    Note : Can use salmon fillet, fried egg, crab-flavored sticks and squid etc. to make delicious assorted XO sushi.
    Remark: Sugar and salt can be replaced by 4 tbsp sushi vinegar.
