Fried Scallop with XO Sauce

Scallop (s) 350 g / 克
Cantonese wanton wrappers 8 sheets
Parsley [for topping, optional]


XO Sauce 3 tbsp / 湯匙
Premium Oyster Sauce 1 tbsp / 湯匙

  1. Deep-fry wanton wrappers in hot oil until golden yellow and crisp.  Drain and put on a serving plate.
  2. Blanch scallop in boiling water. Drain.
  3. Pan-fry scallop in 2 tbsp oil until done.  Add seasoning mix and stir well until heated through.  Put scallop on fried wanton wrappers and sprinkle with parsley.
